Cucumber Dill Tea Sandwiches
1 cucumber thinly slicedCucumber Dill Tea Sandwiches
1 pkg small rye bread
½ pkg silken tofu
2 T fresh dill
2 Tbs. lemon juice
1/4 cup fresh parsley
1 garlic clove, minced
1 scallion, sliced
salt to taste
In a blender, blend tofu, dill, lemon juice, parsley, and garlic, until smooth. Add scallion and mix well. To assemble the sandwiches, spread bread with the dill tofu and divide cucumber evenly among slices of bread. Garnish with additional dill.
