Sweet Blueberry Quiche

This recipe was a complete accident! I was making a savory quiche with plain yogurt and bought vanilla yogurt instead. I had already added the yogurt to the mixture before I realized. Then I rushed around to see how I could make a sweet quiche with the ingredients I had on hand. Wha-la! A super yummy Sweet Blueberry Quiche perfect for breakfast.


Sweet Blueberry Quiche
Ingredients
1 prepared pie crust
10 large eggs
2 cups vanilla yogurt
2 cups whole milk
1 c fresh blueberries
1 t orange extract

Directions
Preheat oven to 375 degrees.
Place the pie crust in a 9” pie pan. Line the crust with a sheet of parchment paper and fill with pie weights. Transfer to oven and bake until light brown, about 25 minutes. Remove weights and parchment paper and continue baking until golden brown, about 5 minutes. Transfer to a wire rack; let cool completely.
Beat the eggs until combined.
Place yogurt in a medium bowl and whisk until smooth; add milk and continue whisking until well combined. Add to eggs along with orange extract; mix until well combined.
Put blueberries in the cooled pie crust. Pour over egg mixture until tart shell is full (you may not need to use all of the egg mixture). Bake 20 minutes; reduce temperature to 325 degrees, and continue baking until filling is slightly firm, rather than liquid, and crust is a deep golden brown, 40 to 50 minutes more. Transfer quiche to a wire rack to cool until set, about 20 minutes. Serve warm or at room temperature.

  3. How funny, I'm always in the morning rush and was inspired to make a blueberry + splash of milk + egg concoction in the microwave. I topped it with granola and it actually turned out ok!

    I will have to try out your version though - I can make it on the weekend and then just heat it up in the morning.
