This dish makes an excellent nutritious breakfast during these cold November mornings. If you can't find goji berries, try dried cranberries. Also, you can substitute cooked oatmeal or cooked rice for the cooked quinoa.
Creamy Quinoa Pudding
INGREDIENTS
1 cup quinoa, well rinsed
2 cups water
2 cups apple juice
1 cup goji berries
1/2 c sliced almonds
2 tablespoons lemon juice
1 teaspoon ground cinnamon, or to taste
2 teaspoons almond extract
DIRECTIONS
Put the quinoa and water in a small saucepan and bring to a boil. Simmer quinoa uncovered until done about 15 minutes. Add apple juice, goji berries, lemon juice, and cinnamon. Allow to simmer for 15 minutes longer. Stir in almond extract. Serve warm.
