slices whole wheat walnut bread
¾ lb
thinly sliced smoked turkey breast

bunches watercress, cleaned and stemmed
1 batch
curried apricot tofu (recipe follows)
To assemble the sandwiches, spread
bread halves with the curried tofu and divide turkey evenly among bottom halves
of the bread. Top the turkey with the watercress and cover the sandwiches with
the top halves of the bread.

minced fresh parsley
¼ c
apricot jam
Fresh
lemon juice
½ brick
of silken lite tofu
1 t
curry powder
In a
blender, blend tofu, parsley, curry, and jam until smooth. Add lemon juice, salt and pepper to
taste.
Yay! A new post!!! I have garden cress growing in my garden...is that the same thing as watercress? The curried apricot tofu sounds like a great sandwich spread.
