Chia Seeds have gotten a lot of attention lately. With good cause. Chia seeds are the richest plant source of Omega-3,
are easier to digest than flax seeds,
and studies indicate they can control blood sugar. Did you know chia gel can also be used as a substitute for eggs in
many baked goods? Use a proportion of 1 to 6 ratio of Chia Seeds to water to
make chia gel. Use approximately one tablespoon of chia gel to replace one
large egg in your baked goods.
As you can see Chia seeds are a pretty fabulous superfood, but don’t forget
about the other great superfood ingredients in this yummy wrap. Turkey, blueberries, walnuts, and spinach

¼ c mayonnaise
1 T honey
1 t dry mustard
1 t dry mustard
2 c cooked
turkey, diced
1 c
blueberries
¼ c onion,
finely chopped
½ c walnuts
1 c spinach,
finely shredded
2 T chia
seeds
4 tortillas
Combine all
ingredients except chia seeds and mix well until ingredients are well distributed. Just before serving, add chia seeds and wrap salad
in tortillas.
