Powerhouse Mince Pie

Just in time for your holiday supper!  This is definitely not your traditional Mincemeat Pie.  Completely vegan, this version is simply delicious.  Be careful if you are counting calories however, dried fruit will catch you every time!  


Powerhouse Mince Pie

1 c currants (or raisins)
1 c goji berries (or dried cherries)
½ c dates
Zest from two lemons
Zest from two oranges
½ c dried blueberries
½ c chopped walnuts
2 medium ripe bananas
½ c brandy
1 t grated fresh ginger
1 t freshly grated nutmeg
1 t allspice berries, crushed to a coarse powder


To make the filling, put the dried fruit and walnuts into a bowl. Pour over the brandy, the ginger and the spices. Stir well and leave to stand for 1-2 hours, stirring from time to time, adding additional brandy as needed as the liquid gets absorbed.  Add the bananas and mix well.  For a smoother texture, chop the dried fruit mixture in a food processor before adding the banana.  Heat oven to 400 degrees. Spread filling over bottom of pie shell.  Bake at 400 degrees for 35 to 45 minutes.  If the edges of the crust begin to get too brown, cover with aluminum foil.   Serve warm.
