Pumpkin Pie Mousse

Serve this dreamy creamy mousse at your Halloween party and impress your guests!  Incredibly easy and delicious.  AND healthy!  Your friends will never know there is tofu in it!


Pumpkin Pie Mousse

2 c pumpkin puree
1/2 c maple syrup
1 T pumpkin pie spice
1 brick silken tofu, extra firm


In a blender or food processor, combine tofu, pumpkin, maple syrup, and pumpkin pie spice and blend until smooth and creamy.  Place in refrigerator and allow to firm up.  Once the mousse is firm spread onto ginger molasses cookies or ginger snaps or use your favorite!  Top with a dollop of whipped cream and serve!
