Banana Coconut Mousse

Do you have a few bananas getting ripe too fast?  Did you open a can of coconut milk and only use part of it?  Try this Mousse and impress your friends by how delicious and healthy it is.



Banana Coconut Mousse

3 ripe bananas
1 brick silken tofu, extra firm
1 T maple syrup
1/2 c coconut milk
Graham cookies

In a blender or food processor, combine tofu, bananas, maple syrup, and coconut milk and blend until smooth and creamy.  Place in refrigerator and allow to firm up.  Once the mousse is firm spread onto graham cracker cookies (such as Digestives).  Top with roasted coconut shavings and serve!
