Powerhouse Salmon Salad

Number three of our Powerhouse Salad Series!  All four of the ingredients for the base of these salads are superfoods.  Experiment with what combination tastes best with each salad.  


To serve two people as a main course, start with 6 cups of any combination of spinach, watercress, alfalfa sprouts, and broccoli.
 


Powerhouse Salmon Salad


1/8 c black sesame seeds
8 oz black pepper smoked salmon
1 c edamame, pods removed

Serve over the base greens with Green Tea vinaigrette and spring rolls!

Green Tea vinaigrette
1 T matcha green tea powder
4 T rice vinegar
1 T honey, or to taste
salt and pepper
1/3 c olive oil
