Refreshing and delicious, this salad is ideal in the heat of summer when nectarines are in season and you don't want to cook. Adjust amount of the chile according to taste.
1 c uncooked purple "forbidden" rice
3 nectarines, sliced
1 cooked turkey breast, diced
4 c Napa cabbage, shredded
1/4 c red onion
basil, shredded, to taste
coconut lime dressing
Cook rice according to package directions. Toss remaining ingredients including coconut lime dressing. Serve immediately.
Coconut Lime Dressing
1/2 c coconut milk
zest of one lime
juice of one line
1 t brown sugar
1 red chile, finely chopped
Combine all ingredients and mix well.
