Chilled Powerhouse Soup

Delicious, nutritious, and refreshing in the heat of the summer!     


3 c  Coarsely chopped papaya
3 c  Coarsely chopped strawberries
2 c  Fresh orange juice
3 T  Honey
2 c  Dry champagne
1 c  Whipping cream
Fresh mint leaves (garnish)
 

Finely chop 1 1/2 cups of papaya.  Set aside.  Place remaining coarsely chopped papaya in blender with orange juice and honey.  Pour into large bowl.  Blend strawberries using orange juice as needed to thin the mixture.  Cover and refrigerate until ready to serve.  Stir chilled champagne and reserved papaya into papaya mixture.  Pour into iced bowls.  Swirl strawberry mixture into papaya mixture.  Whip the cream and use as garnish with fresh mint leaves.
