Lemon Blueberry Cheesecake Mousse

Use this mousse to top cookies or dip fruit.  Absolutely scrumptious!



Blueberries
8 oz pkg Non fat cream cheese
zest of one lemon
1 t Vanilla
4 T Honey

In a medium bowl, combine cream cheese, lemon zest, vanilla, and honey and blend until smooth and creamy.  Place in refrigerator and allow to firm up.  Once the mousse is firm spread onto graham cracker cookies (such as Digestives).  Top with blueberries and serve!
