Quinoa Custard

This custard makes a great breakfast.  Serve with fresh berries in lavender cream and coffee.  Or as a dessert, with a dollop of whipped cream and drizzled with honey.
  

Quinoa Custard

1 cup quinoa, cooked
1 1/2 cups milk                                
3 T honey
2 small eggs, beaten
¼  cup almond meal
¼  tsp cinnamon                                
¼  tsp lemon rind, grated      
¼  cup goji berries        
¼  cup shredded coconut
½  tsp vanilla
½  tsp lemon juice

Combine all ingredients. Pour into greased baking dish or greased individual custard cups. Bake in 350-degree oven until set, about 45 minutes.  If using a baking dish you may need to increase the cooking time a bit. Serve hot or cold.
