Powerhouse Chocolate Salad

Over the next couple months, we'll be doing a series on Powerhouse Salads.  These uber delicious and spectacularly nutritious salads start with the same Powerhouse base:  spinach, watercress, alfalfa sprouts and broccoli.  Then we add additional fruits, vegetables, and other superfoods to pack in even more nutrition and flavor.

Mediterranean Salad
Salmon Salad
Tofu Salad
Turkey Salad

This particular salad, the Chocolate Salad, adds the superfoods: blueberries, walnuts, and cacao nibs, in addition to several ingredients in the vinaigrette, to crank up the nutritional punch.  

The proportions below will serve two as a main dish or six as a side.


Powerhouse Chocolate Salad

Start with 6 cups of any combination of spinach, watercress, alfalfa sprouts, and broccoli as the base.

Add:
1 c Blueberries
1 Mango, sliced
½ c Walnuts
¼ c Cacao nibs
¼ c fresh chive blossoms

Serve with Chocolate Vinaigrette:

Chocolate Vinaigrette – juice from 2 lemons, 2/3 c olive oil, 4 oz melted dark chocolate, pinch cayenne pepper, 1 T prepared stone-ground mustard, 1T sugar, 2T balsamic vinegar, and 1 T champagne vinegar
