Powerhouse Mediterranean Salad

Here is the second in our series of Powerhouse Salads!  Everything should just be getting ripe enough to harvest.  Buon appetito!


Powerhouse Mediterranean Salad

Start with 6 cups of any combination of spinach, watercress, alfalfa sprouts, and broccoli as the base.

Add:
1 c garbanzo beans
Grape or cherry tomatoes
¼ c feta cheese, crumbled
1 cucumber, sliced

Garlic vinaigrette – 4 med crushed garlic cloves, 2/3 c olive oil, 2/3 c balsamic vinegar, salt and pepper, ½ t dry mustard, ½ t dillweed, ½ t oregano, 4 scallions sliced, 2 T lemon juice


Serve with garlic cheese bread.
