Louisiana Summer Veggies

Whoooo-eee!  You can make this as spicy as you want based on the heat from your Creole seasoning mix.  The longer it sits the more flavorful it will be.  Bon Appetit!!



Louisiana Summer Veggies


3 ½ c white vinegar
1 c olive oil
3 c water
2 T peppercorns, lightly crushed
1 t Old Bay seasoning
1 T sea salt
2 T Joe’s Stuff or other Creole seasoning mix
1 head elephant garlic, coarsely chopped
1 lb green beans, trimmed
1 head broccoli, in bite size pieces
2 zucchini, cut into half moon slices
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ red onion, sliced


Combine all ingredients except last six vegetables in a large saucepan.  Bring mixture to a boil and allow to simmer for 15 minutes.  Put all the vegetable in a large dish.  Immediately pour the mixture over the prepared vegetables.  Cover and allow to cool.  Eat warm or place in refrigerator to chill.  Serve with grilled meats as a side dish.
